NoriFish and Okiboru, two Japanese dining concepts led by Atlanta chefs Sean Park and Justin Lim, are set to open new locations in the Central Food Hall at Ponce City Market in spring 2026. NoriFish specializes in sushi with fresh seafood sourced directly from Tokyo’s Toyosu Fish Market, delivered twice a week. The menu will be curated specifically for Ponce City Market and include signature sushi rolls, nigiri, premium seafood, warm dishes, and small plates. Hendry Kurniawan, an Atlanta mixologist and certified sake advisor, is overseeing the beverage program.
NoriFish was founded by Chef Park in 2022 and has established itself as a notable sushi destination in Atlanta with existing locations in Buckhead and Sandy Springs.
Okiboru was co-founded by Park and Lim and first opened in Los Angeles in 2018. The restaurant has received a MICHELIN Bib Gourmand award. The upcoming location will focus on tsukemen (dipping noodles), ramen made with collagen-rich broths and house-made noodles, as well as appetizers and rice dishes. Beverage offerings will include cocktails, sake options, lagers, craft beers, teas, and soft drinks. Okiboru also operates locations in Sandy Springs, Buckhead, Duluth, Buford, and three sites in New York.
According to the announcement: “Together, NoriFish and Okiboru represent a modern interpretation of Japanese dining –– one that honors tradition while pushing flavor forward. NoriFish and Okiboru are designed to reflect the brands’ core values: integrity, discipline and an uncompromising commitment to quality.”
Ponce City Market will also see the addition of other businesses this year including Terminal 26 (a Thai street food restaurant), La Cueva (a cocktail lounge & listening room), The Commodore (a barbershop), and Three Taverns Brew Terminal (a brewery/distillery/taproom with food from DAS BBQ).
