Barnsley Resort in Adairsville has named Shaun Doty as Executive Chef for its new restaurant, Jules. The restaurant is set to open in late summer and will feature a menu influenced by Southern traditions, Japanese cooking techniques, and European elements. Jules will be a dinner-only venue and marks the resort’s most significant culinary project to date, joining other dining options like Woodlands and the Biergarten.

The design of the restaurant was handled by David Thompson Studio from Charleston, drawing inspiration from Julia Barnsley, daughter of the estate’s original owner. The building itself was originally constructed in 1854 as a farmhouse in Rome, Georgia. It was moved to Barnsley Resort in 1994 and previously operated as Rice House after being outfitted with a commercial kitchen. For its latest chapter as Jules, the space has undergone a complete renovation led by HDA Architects based in Rome.

Chef Doty will participate in events at the resort while collaborating closely with chef de cuisine David Doyle, who will manage daily kitchen operations according to Doty’s vision.

Jules’ menu highlights regional ingredients sourced from the resort’s own farm as well as local gardens and Georgia suppliers. Offerings will change seasonally with an emphasis on sustainability and adapting to ingredient availability. Doty also plans initiatives such as starting a fermentation program, implementing composting practices, and using recycled paper for menus—all aimed at achieving recognition like the Michelin Green Star.

Doty brings over thirty years of experience to his new role. He is recognized for his work at Atlanta’s The Federal—nominated for Best New Restaurant by James Beard—and has launched several Atlanta eateries including Shaun’s, Yeah Burger, and Bantam & Biddy. His early career included time at Ritz-Carlton Buckhead under Chef Guenter Seeger and experience working at Michelin-starred restaurants in France and Belgium.

The reopening of Jules follows extensive renovations across Barnsley Resort led by South Street Partners. Recent updates include remodeled cottages and guest rooms designed by Charlotte Lucas Design from Charlotte.
